CAJUN STEAKS

INGREDIENTS

2 tablespoons Cajun spice

¼ cup coconut oil

2 medium skirt steaks

1/3 cup lemon juice

¼ cup apricot preserves

¼ cup coconut aminos

DIRECTIONS

In a bowl, mix half of the Cajun spice with lemon juice, aminos, oil and apricot preserves and mix well. Pour this into a pan, bring to a boil over medium high heat and simmer for 8 minutes. Blend this using an immersion blender and leave aside for now. Season steaks with the rest of the Cajun spice, brush them with half of the apricots mix, place them on preheated grill over medium- high heat and cook them for 6-minutes on each side.

Divide steaks on plates and top with the rest of the apricots mix.
