BAKED CHICKEN MEATBALLS WITH SWEET SAUCE

INGREDIENTS

1 teaspoon sweet paprika

1 pineapple, diced

1 egg, whisked

2 pounds chicken meat, ground

A pinch of sea salt

Black pepper to taste

1 teaspoon garlic powder

1 teaspoon onion powder

 

For the sauce:

¼ cup coconut amino

4 tablespoon ketchup

1 tablespoon ginger, grated

½ cup pineapple juice

2 teaspoons raw honey

½ teaspoon red pepper flakes

Salt and black pepper to taste

1 tablespoon garlic, minced

DIRECTIONS

In a large saucepan, mix amino with ketchup, ginger, pineapple juice, garlic, pepper flakes, honey, a pinch of sea salt and pepper, bring to a boil over medium heat. Simmer for 8 minutes and turn off the heat. In a bowl, mix chicken meat with paprika, egg, onion powder, garlic powder, salt and black pepper to taste. Shape meatballs, arrange them on a lined baking sheet, place them in the oven at 475 degrees F and bake for 15 minutes. Heat up a pan over medium heat, add pineapple pieces, stir and cook for 2 minutes. Add baked meatballs, pour sauce, divide between plates and serve.
