CHICKEN & BROCCOLI WITH SOY GINGER SAUCE

INGREDIENTS

1 red bell pepper, chopped

1 zucchini, chopped

1 yellow onion, finely chopped

1 broccoli head, florets separated

4 chicken breasts, skinless, boneless and chopped

A pinch of sea salt

Black pepper to taste

1 tablespoon coconut oil

 

For the sauce:

¼ cup chicken broth

2 garlic cloves, minced

3 tablespoons coconut amino

½ cup orange juice

1 tablespoon orange zest, grated

¼ teaspoon ginger, grated

A pinch of red pepper flakes

DIRECTIONS

In a bowl, mix the chicken stock with orange juice, zest, amino, ginger, garlic, pepper flakes and whisk. Heat up a pan with oil over medium heat and add chicken. Cook for 8 minutes and transfer to a plate. Heat up the same pan over medium heat and add bell pepper, broccoli florets, onion, and zucchini. Stir and cook for 4-5 minutes. Add a pinch of sea salt, pepper and orange sauce you’ve made. Bring to a boil and add the chicken. Reduce heat and simmer for 8 minutes. Divide between plates and serve hot.
