CILANTRO SHRIMP

INGREDIENTS

1 small red bell pepper, chopped

1 small yellow onion, chopped

20 shrimp, peeled and deveined

1 garlic clove, minced

1-inch ginger, minced

¼ cup coconut aminos

A pinch of sea salt

Black pepper to taste

2 tablespoons coconut oil

2 tablespoons water

1 tablespoon lime juice

1 teaspoon apple cider vinegar

A handful cilantro, chopped

DIRECTIONS

In a bowl, mix the aminos with vinegar, water, lime juice and whisk. Heat up a pan with oil over medium heat. Add garlic and ginger and cook for 2 minutes. Add the onion, bell pepper and again cook for 4 minutes.  Add shrimp, salt, pepper and the vinegar mix. Divide between plates and serve with cilantro sprinkled on top.
