REFRESHING SHRIMP SALAD

INGREDIENTS

2 cucumbers, cut with a spiralizer

1 pound shrimp, peeled and deveined

4 garlic cloves, minced

2 tablespoons olive oil

2 tablespoons lemon juice

2 tablespoons chives, minced

A pinch of sea salt

Black pepper to taste

DIRECTIONS

Heat up a pan with oil over medium heat, add garlic to it. Stir and cook for 3 minutes. Add the shrimp and the lemon juice. Cook for 4 minutes more and transfer to a bowl. Add cucumber noodles, salt, pepper and the chives, toss and serve.
