SLOW COOKER BEEF & ONIONS

INGREDIENTS

2 cups pearl onions

3 and ½ pounds grass fed beef meat, cubed

4 garlic cloves, minced

2 sweet potatoes, chopped

2 celery stalks, chopped

A pinch of sea salt

Black pepper to taste

2 tablespoons tomato paste

2 cups carrot, chopped

2 cups beef broth

1 teaspoon thyme, dried

1 tablespoon coconut oil

DIRECTIONS

Heat up a pan with oil over medium-high heat. Add beef and stir until brown for 2 minutes on each side and transfer to a slow cooker. Add all the other ingredients, toss and cook on low heat for 8 hours. Divide between plates and serve.
