SWEET POTATO BALLS

INGREDIENTS

2 cups sweet potatoes, peeled, cubed and boiled

2 garlic cloves, minced

4 tablespoons cilantro, chopped

1 teaspoon black pepper

A pinch of sea salt

Juice of 2 limes

A pinch of cayenne pepper

2 tablespoons nutritional yeast

DIRECTIONS

In a bowl mix sweet potatoes with a pinch of salt and pepper and mash well. Add garlic, cilantro, black pepper, lime juice, cayenne and nutritional yeast and stir very well. Shape small balls out of this mix and arrange them on a baking sheet. Place in the oven at 350 degrees F and bake for 25 minutes. Arrange balls on a platter and serve them cold.
