EGGS, RADISHES AND ONIONS SALAD

INGREDIENTS

8 radishes, sliced

2 eggs

½ cup green onions, chopped

1 tablespoon mayonnaise

½ teaspoon mustard

1 tablespoon lemon juice

A pinch of sea salt

Black pepper to taste

A few lettuce leaves, chopped

DIRECTIONS

Put water in a pot. Add eggs and bring to a boil over medium high heat. Cook for 10 minutes and transfer eggs to a bowl filled with ice water. Leave them to cool down. Peel and chop them. In a salad bowl, mix lettuce leaves with chopped eggs, green onions and radishes.  Add mustard, mayo, lemon juice, a pinch of salt and black pepper. Toss to coat well and serve.
