PUMPKIN ALMOND COOKIES
INGREDIENTS
¼ cup apple sauce
1 and ½ cup pumpkin puree
1 teaspoon vanilla extract
¼ cup coconut milk
1 cup almond milk
½ teaspoon pumpkin pie spice
½ cup coconut flour
DIRECTIONS
In a bowl, mix apple sauce with pumpkin puree, vanilla extract, coconut milk and stir very well. Add almond milk, pumpkin pie spice, and coconut flour to the bowl. Drop spoonful of batter on a lined baking sheet and flatten with a fork. Place in the oven at 350 degrees F and bake for 25 minutes. Take cookies out of the oven, leave aside to cool down, transfer to a platter and serve.
